Nut free protein cookies

Packing a nut free healthy snack for school lunch box is always a top priority for mothers like me. This cookie recipe is not only nut free but is full of protein and fibre too. This recipe makes use of all organic and unrefined ingredients as well. I got the ingredients from woolies from the health food section. 

 Spelt flour is  made from spelt grain and is an alternative to wheat flour. It is more water soluble than wheat and can be digested easily. It is rich in trace minerals like copper and magnesium. It has high bran content too. It has a nutty and slightly sweet flavour. You will notice that spelt flour is unprocessed and retains the bran and the husk.



Made from hemp seeds, hemp flour is rich in essential amino acids, omega 3 and omega 6. It has high GLA and helps in protecting from inflammation. Hemp is good for the heart and brain function. High in protein, hemp will also add a nutty taste to the cookies. Make sure you add not more than 1/4th proportion in the recipe as hemp is slightly bitter. For vegetarian like me, hemp is really a good source to add protein to the diet.



Coconut flour is made from dried coconut  flesh. It is rich in fibre, lauric acid and has trace minerals. Pure coconut flour is gluten free.



Ingredients:



Unsalted organic butter 225 g - At room temperature


Organic powdered panela sugar (Evaporated cane sugar) - 1/2 cup or 75 g


Organic spelt flour 1 cup


Organic Coconut flour - 0.5 cups


Organic hemp flour 0.5 cups


Himalayan salt 1 pinch

 Additives: Optional for flavour/ aroma/ Colour: 


- caraway seed or Ajwain seed


- Spices like Cinnamon powder/ cardamom powder/ nutmeg powder/ pure vanilla powder  - 1 tsp

 This will roughly make 18 to 20 cookies depending upon the size of the cookie.


1. Preheat the oven for 10 to 15 mins.



2. Whisk the butter with an electric whisk or a stand mixer. Add powdered sugar slowly and beat it together until well combined. I used Panela Sugar as I wanted to get a caramel taste and also it is an unprocessed sugar.



3. Sieve the flours into a big round vessel with salt and mix well.



4. Add the sieved flour to the butter sugar mix and gently fold in from sides making sure everything is combined well. The consistency should be if you take the cookie dough with your finger, it should not be sticky. If it is sticky because of excess butter you can add little bit more spelt flour. Mix again. Adding too much butter will make the final product/ cookie crumble fast.



5. Take a medium size cookie dough. Roll gently with your palm. Flatten the cookie gently. Do not flatten too much. Create lines in the middle of the cookie dough with the help of a fork.



6. Place the cookies on a baking tray and bake it for 180 degree for 20 min until you notice a nice brown colour forming on the top. Leave it to cool on a cooling tray and store it in an airtight container.

 You can completely omit sugar for a sugar free version too 😊
