Gluten free and Eggless Quinoa- Chia Coconut flour macadamia cookies

This was my first attempt at making cookies and I was really pleased with the output. I wanted to come up with a recipe that makes use of gluten free flour and strictly no eggs!

So my first hunt was for gluten free and grain- free flour. One day after work, I made a bee line to my favorite health shop in the city – Great Earth Discount store, Melbourne. They sell from natural and organic skin care, body care, hair care to yummy and organic food products. First thing I spotted in the food section was organic coconut flour! The label described it as –

“It is made from fresh organic coconut meat, finely ground into flour with the consistency of regular flour. It is low in carbs and good source of protein and without the gluten. Rich in fibre approx 38.5% fibre which is the highest percentage of dietary fibre found in any flour.”

Also, I got some quinoa and chia seeds to be used in the recipe. They both are gluten free and considered as super foods. I powdered them in the blender finely to attain flour like consistency.

Here is the recipe for you. This recipe makes about 28 small to medium sized cookies approx.

Warning: Cookie dough is very addictive!

If you plan to eat the cookie dough like me, you may end up with less number of cookies :)

Ingredients:

  1. Organic coconut flour – 1 cup
  2. Chia and quinoa flour – 1/2 cup in total ( blend chia seeds and quinoa separately in a blender to a fine consistency)
  3. Unsalted butter left at room temperature- 200 grams
  4. Brown sugar/ powdered sugar – 1 cup
  5. Milk – 1/4 cup
  6. Baking powder – 1 tsp
  7. Kitchen grade baking soda – 1/2 tsp
  8. Himalayan pink salt or normal salt- 1 pinch
  9. Cinnamon powder – 1 tsp
  10. Vanilla extract – 2 tsp
  11. Macadamia nuts – split into half – Handful

Method:

1. Pre-heat your oven to 175 degree C. Line your baking tray with baking sheet.

2. Blend chia seeds and quinoa separately in a blender to a fine consistency.

3. Take a mixing bowl and mix the chia- quinoa flour with the coconut flour making sure there are no lumps.

4. Add baking powder, baking soda, salt to the flour and mix it again.

5. Using hand held electric mixer or stand mixer, whisk the unsalted butter and brown sugar together until it becomes soft and creamy.

6. Add your milk, vanilla extract to the mixture when whisking.

7. Next, slowly add the flour to the whipped butter -sugar mixture.

8. Blend everything until you see the mixture forming into dough like consistency.

9. Make a lemon sized ball out of the cookie dough using your palm and flatten it on the baking tray.
10. With the help of a fork, make some lines on top of the flattened cookies.
Use macadamia nuts as topping. You can use any nuts as a topping. Cashews, almonds and walnuts are equally delicious and crunchy when roasted.

11. Bake the cookies in the oven for 20 to 25 minutes until it turns golden brown.

12. Take it out of the oven and allow it to cool down at room temperature.
Store your cookies in an air tight container.

Enjoy these crunchy and addictive cookies with your milk or filter coffee!
